It is 3:49 AM as I am writing these lines.

I should be in bed or at least be doing something useful. Like checking the fridge for spoiled food.

3:55 AM One slice of ham and a sip of milk later

Looking at the moldy cream cheese in my fridge I wonder who the first person was who came up with blue cheese.

I mean if you find some piece of cheese covered in mold you are usually not like “Yay, let it ripe a little bit longer. This is going to be great!”

4:00 AM Blue Cheese

Of course, I had to check Wikipedia on blue cheese, and guess what?

This is where it ends. Did the guy just shrug and take a bite? Seriously?

Cheese, left in a cave! For months! Transformed by mold?

It had even changed color!

Sure, why not?

If you think about it the history of food is pretty gross. And amazing.

Brave people. Or very stupid people. Or probably just very hungry folks.

Just imagine how we figured out which plants are edible. A lot of people must have sacrificed their lives to get us where we are now.

4:10 AM Truffles

The path on Wikipedia  is short from mold to fungi. Check this image out, and then tell me you’d immediately think this would be awesome over your pasta?

I pass.

4:30 AM A yogurt and  some milk chocolate later.

Yogurt, yoghurt, or yoghourt is a food produced by bacterial fermentation of milk.” Thank you Wikipedia. At least, now I realize why I never knew how to write ‘yogurt’. With h or without. Big relief, it doesn’t matter. bacterial fermentation. Not so much.

Yogurt is produced using a culture of Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus bacteria.Streptococcus?

“Streptococcal pharyngitis, also known as strep throat, is an infection of the back of the throat including the tonsils caused by group A streptococcus” What’s going on?

4:45 AM I’ve got a very dry mouth.

My fingers slide towards my lymph nodes. Don’t feel much like eating anymore. I should go back to bed.
